Taste of Autumn

As autumn arrives, a new crop of tasty fruits and vegetables come into season. Amongst these is the pumpkin, a food stuff which is better known as a Halloween decoration than for its wonderful taste. However, the humble pumpkin is actually an undercover superfood packed with everything from protein and fibre to antioxidants and essential vitamins and minerals. This super squash can be used in a variety of dishes including pies, stews, risottos and curries.

Our delicious soup recipe is the perfect way to encourage your children to try pumpkin.

Ingredients

› 2 tbsp olive oil
› 1 tsp paprika
› 2 onion, finely chopped
› 1kg pumpkin, peeled and deseeded
› 700ml vegetable or chicken stock
› 140ml double cream

Method

1. Heat the oil in a heavy based pan, gently cook the onions until soft but not coloured.
2. Add the pumpkin and cook a while longer.
3. Add the paprika and stir through.
4. Add the stock and bring to a simmer for approximately 10 minutes. Blend.
5. Add the cream and stir in.
