Kids 1st in the kitchen – Tuna ‘Meatballs’

This month’s recipe is a popular choice for both our children and staff! The children love this fun (and healthy) take on a traditional Italian dish and we are sure you will too.

2 cans of Tuna
Zest of 1 lemon
A handful of fresh parsley
50g Brown breadcrumbs
1 Egg
50g grated mild cheddar cheese
Vegetable oil

Step 1
Flake the tuna into a large bowl, add the lemon zest, parsley, breadcrumbs, cheese and eggs. Mix well.

Step 2
Roll the mixture into balls, leaving them to chill and set in the fridge until you are ready to cook.

Step 3
When you are ready to cook the tuna meatballs, heat a little oil in a frying pan and cook till browned, turn frequently.

Tip: Serve with whole-wheat spaghetti (400g) and a tasty tomato sauce for an extra tasty dinner.

* Serves around 4-6
