Kids 1st in the kitchen – Pumpkin hummus

This tasty and healthy recipe is perfect for a Halloween party or spooky night in with the little ones. Served in a small pumpkin, this recipe is sure to impress!

Ingredients:
1 small pumpkin (around 500g)
2 garlic cloves
1 tablespoon of lemon juice
400g can chickpeas
Olive oil

Method:

Step 1
Carefully cut the top off you pumpkin to create a lid and bowl. Using a spoon, scrape away the pumpkin seeds until the pumpkin flesh is visible. Scoop the flesh out from the pumpkin and the lid and put aside to use later.

Step 2
Heat your oven to around 200C/180C fan/gas 6 and prepare a roasting tray. Chop the pumpkin flesh into cubed pieces and pop them in a roasting tray. Peel and crush the garlic cloves and add them to the tray with the pumpkin pieces. Add a dash of olive oil and shake the tray to make sure the ingredients are coated.

Step 3
Bake the pumpkin until the pieces are very soft and tender, ready to mash. Once cooled, add the roasted pumpkin and garlic into a food processor, making sure to add any juices from the roasting tray for extra flavour.

Step 4
Drain and rinse the chickpeas, adding them to the food processor with a tablespoon of lemon juice. Blend the ingredients until they are smooth and form a paste – adding a little water if it is too thick.

Step 5
Spoon the hummus into the pumpkin bowl and serve with a range of tasty crudités such as peppers, carrots, celery and other crunchy vegetables.

Tip: Add a sprinkling of cumin powder for a spicy kick!
