Kids 1st in the kitchen – Pineapple and Courgette Cake

After popular demand… here is our tasty ‘Pineapple and Courgette Cake’ recipe for you all to try at home.

This recipe makes approximately two loaf tins, divide the recipe accordingly to cater for the quantity you need. Although, this recipe is so tasty – we’re sure you’ll need to make more than one loaf tin soon enough!

375gm plain flour
2 tsp bicarbonate of soda
¼ tsp baking powder
100g caster sugar
250ml vegetable oil
3 eggs
¾ Tsp vanilla essence
250g grated courgette
½ tin (432g) of crushed pineapple


Step 1
Prepare the loaf tins by lightly greasing or lining them with baking parchment and pre-heat oven to 170C.

Step 2
Mix the flour, bicarbonate of soda and baking powder in a bowl and set aside for later.

Step 3
Carefully beat the sugar, vegetable oil, eggs, and vanilla essence together in a large mixing bowl until all ingredients are incorporated. Once the mixture has come together, stir in the crushed pineapple and grated courgette.

Step 4
Gradually pour the flour mixture into the wet mixture and gently stir until the cake batter is just combined.

Step 5
Pour the cake batter into the loaf or cake tins evenly. Bake for approximately 1 hour or until a skewer inserted into the centre comes out clean.

Tip: For a different twist on this recipe, add raisins (145g) for extra texture and fruit or ½ tsp of cinnamon for spice.
