Kids 1st in the Kitchen – Chocolate and Courgette Cake

It’s National Chocolate Week (12 – 18 October), so to celebrate we thought we would share with you the recipe for the Chocolate and Courgette Cake that we serve in our nurseries at Kids 1st. It truly is delicious and your children will love it!

Ingredients

› 180g plain flour
› 1tsp baking powder
› 120g granulated sugar
› 2 eggs
› ½ tsp bicarbonate of soda
› 30g cocoa powder
› 60g glace cherries
›  170ml vegetable oil
› 240g courgette

Method

 1. Grease and flour a 33 x 23 cm/13 x 9 inch tin.

2. Sift together the flour, cocoa powder, baking powder, sugar, bicarbonate of soda and sugar

3. Beat the eggs with the vegetable oil.

4. Mix the egg and oil into the dry ingredients and then stir in the grated courgette and reserved juice. Mix in the cherries.

5. Pour batter into the tin.

6. Bake for 30–40 minutes (180 degrees C or Gas Mark 4) until well risen and just pulling from the sides of the tin.

7. Cool and cut into squares.
